Waste Not Want Not

Over the years I have wasted so many Bananas.  As I am throwing them away I always think I should be making banana bread with these but I don't know how.
On Monday I decided to take the time to see if I could find a recipe for banana bread that only used ingredients I had on hand.  It took me about 2 minutes to find one and the bread turned out so good and it was as easy as other things that I make on a weekly basis!

Banana Bread

    .            -3 or 4 ripe bananas, smashed (I used 3)

      .            -1/3 cup melted butter

      .            -1 cup sugar

      .            -1 egg, beaten

      .            -1 teaspoon vanilla

      .            -1 teaspoon baking soda

      .            -Pinch of salt

        -1 1/2 cup of all-purpose flour

Bake at 350 degrees for 1 hour

Today Kobe stayed home from school.  He has a little cold.  He has been acting fine for the most part, playing as hard as ever, but he has a runny nose and dry cough that sounds pretty yucky so I didn't want to send him in like that.  I knew if I gave him today off plus not having school tomorrow would help him get over it quickly.

I am trying to be a less wasteful/more productive person lately and it is kinda fun :)

Ben loves Banana Bread so it works out good. (I love it too)

But, of course, this week Kobe decided to go on a banana binge so no Banana Bread next week :)

Love you Linds!!!!

Grandma, we are SO excited for you to be home, it will be fun for the guys in SC to get to spend time with you soon too!

I was in the mood to bake also today. We had a snow day so I made a batch of unbaked cookies and also a batch of cinnamon rolls. While the dough was raising Lindsey and I took Gus for a walk. It was so slippery that Lyn fell twice. It was quite funny. I also made her run. Gus was following me so I started to run and Lyn held the leash and had to keep up. This has been such a good day. Todd, Amanda and Caleb also are in.

Leah, if you don't have time to bake you can always freeze the bananas and use them later.

I just did the same thing last week, but made a banana chocolate chip bread. It was great! I love making banana pancakes with them too. All I do is mash up the bananas like banana bread and add in the pancake stuff and mix all up. They are great!!!
I can't stand wasting them either. And, yes, Vicky, is right. Freeze them if you don't have time right then to bake it, but make sure you take the peels off, and put them in a ziploc b/c they are very hard to peel frozen!!

LOVE THE PICTURE of Kobe and Grandpa...so cute! I would frame that one for sure:).

Love you guys. Have a great day!
